Green Goddess Dressing

This creamy but not-too-rich, tangy but-not-too-puckery, smooth but packed with flavor dressing is a great way to make a simple, two-ingredient salad sing. No need to add a whole lot of extras here, just grab the freshest head of lettuce you can get your hands on. Our favorite variation? Blend in an avocado and add 4-5 sprigs of cilantro and a touch of lime juice for the perfect dipping sauce.

Ingredients

  • 1/2 cup Mayonnaise see our recipe here
  • 1/3 cup Buttermilk or plain yogurt
  • 1/4 cup Chives finely chopped
  • 1/2 cup Parsley finely chopped
  • 1 Tbsp Tarragon finely chopped
  • 2 tsp Fresh lemon juice
  • 2 Anchovy fillets
  • 1 clove Garlic
  • Salt & pepper to taste

Instructions

  • Puree all ingredients together. Add salt and pepper, to taste

Notes

We were lucky enough to land on some fresh garbanzo beans at the farmers market this morning and gave them a quick two-minute dip in boiling water, strained and fried them with 1 Tbsp of oil in a hot skillet, tossing them with salt before adding them to this bright salad for a crunchy finish.
