Ingredients

Loaded Sweet Potatoes

  • 2 large yams or sweet potatoes
  • 1 cup White beans cooked or canned
  • 1/4 cup Pine nuts
  • 2 Tbsp Lemon juice
  • 2 cloves Garlic
  • 2/3 cup Olive oil
  • 1 bunch Kale
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375F. Cut each sweet potato lengthwise and prick the flesh with a fork. Place flesh-up on a cookie sheet and bake until tender (about 35 minutes).
  • Meanwhile, warm the oil with the pine nuts in a skillet over very low heat. The moment your nuts get a little color on them, remove them from heat and set aside.
  • Place your beans, garlic, lemon juice and half of the pine nuts and its oil in a food processor and blend until smooth. Taste and adjust with salt and more lemon juice, if desired.
  • Stem the kale and rip it into pieces. Place on a cookie sheet and toss with a teaspoon of oil and a few pinches of salt. Bake for 5-7 minutes, or until crisp.
  • Remove the sweet potatoes from the oven. Spread the white bean hummus over each potato and top with crushed kale. Top with the remaining pine nuts and drizzle pine nut oil. Serve warm.
