Apple Cinnamon Coffee Cake

There are a few things that confuse the hell out of a non-English speaker. I was in second grade when we arrived, knew a few basic words, but could not, for the life of me, understand 1. Phil Collins’s song Sussudio (it’s not a real word), 2. why Americans called them French braids when we called them American, and 3. Coffee Cake. I wouldn’t touch it and could not understand why kids would beg for cake that had coffee in it. Until I had one. Meet the classic, super-moist and altogether non-caffeinated coffee that’ll pair well with a cup of brew. C’est trop bon!

Ingredients

Coffee Cake Base

  • 3 oz Melted butter 84g
  • 1/4 cup Vegetable oil 56g
  • 1 cup Sugar 200g
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 cup Sour Cream 240g
  • 2/3 cup All purpose flour 80g
  • 1 cup Whole wheat flour 120g
  • 1 Tbsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Kosher salt

Apple Cinnamon Filling

  • 2/3 cup Brown sugar 135g
  • 1/2 cup All purpose flour 60g
  • 1/2 cup Whole wheat flour 65g
  • 1 Tbsp Ground cinnamon
  • 1/2 tsp Kosher salt
  • 6 ounces Melted butter 168g
  • 2 Apples or 1 really large one

Crumble Topping

  • 1/3 cup Brown sugar 72g
  • 1/2 cup All purpose flour 60g
  • 1/3 cup Whole wheat flour 45g
  • 1/2 tsp Kosher salt
  • 3 oz Cold butter 84g

Instructions

Coffee Cake Base

  • Preheat your oven to 350F. Line am 8″x8″ square baking pan with two strips of parchment paper, each the width of the pan. Criss cross them in the pan and start making your batter.
  • In a large bowl, whisk together your melted butter, oil, sugar, eggs, extract and sour cream. Sift all of your dry ingredients over the wet and whisk until just combined. Set the batter aside.

Apple Cinnamon Filling

  • Mix all ingredients together. Dice up your apple, leaving it unpeeled, into 1/2″ pieces. Set these aside.

Crumble Topping

  • Place all ingredients in a medium bowl and rub the butter into the dry ingredients until even crumbles form.
  • Scoop 2/3 of the cake batter into your pan and spread to the edges. Sprinkle the filling and the apples over the batter.
  • Scoop the remaining batter over the filling, spreading that to the edges. Sprinkle the crumbles over the batter and bake for about 50 minutes.
