Apple Tatin Filling
- 1/2 cup Sugar 100g
- 112 g
- 1/4 cup Apple juice or cider 60g
- 4 Apples sliced thin
- In a sautee pan melt the sugar, without stirring much, until it is golden brown.
- Turn the heat down and add the butter and stir until it has melted. Add the cider.
- Add the apples and cook down until they are caramelized.
- Remove from heat and cool before arranging in a tight spiral to a cold, unbaked crust. Bake as directed above.
