Because summer cooking is about leftovers.  Today’s special recipe was brought to you by leftover beans, too many corn cobs on the grill and leftover chopped onions from our Knife Skills class.  Find more corn recipes

Ingredients

Grilled Corn and Bean Salad

  • 3 ears Corn, kernels removed
  • 1 small Jalapeno pepper (optional)
  • 2 cups Black beans
  • 1/2 Red onion, finely chopped
  • 3/4 cup Finely chopped cilantro
  • Juice of 3 Limes
  • 1 tsp Salt
  • 1/2 tsp Cumin

Instructions

Grilled Corn and Bean Salad

Toss all ingredients together. Taste. Adjust.
