Monster Eyeball Cookies
Ingredients
SHORTBREAD SUGAR COOKIE DOUGH
- 4 oz Unsalted butter 112g
- 1/4 cup Granulated sugar 50 g
- 1 Egg yolk 1
- 1 pinch Salt pinch
- 1/2 tsp Vanilla extract 1/2 tsp
- 1-1/4 cups All-purpose flour 166g
Royal Icing
- 2 cups Powdered sugar 240g
- 1 Egg white 30g
- 1/4 tsp Lemon juice 1/4 tsp
- 1 pinch Salt pinch
Instructions
Shortbead Sugar Cookie Dough
- Cream the butter and sugar with a stand or hand-held mixer fitted with paddle attachment. Add egg yolk , salt and flour and mix until just combined. Roll dough between two sheets of parchment paper and place on a cookie sheet. Chill until firm.
- Heat oven to 350F. Cut cookies out and place on parchment-paper lined cookie sheet. Bake until just golden on the edges.
- Once cooled, dip tops of cookies into icing. Shake, flip and allow to dry.
Royal Icing
- Beat all ingredients until smooth.Divide into bowls to color and add a touch of water, if needed, to thin out.
