OATMEAL SANDWICH COOKIES
Ingredients
OATMEAL COOKIES
- 2 sticks Butter 8oz or 224g
- 1 cup Brown sugar 220g
- 1 cup Granulated sugar 200g
- 1 Egg
- 2 tsp Vanilla extract
- 1 tsp Kosher salt
- 1 3/4 cups All purpose or spelt flour 210g
- 2 tsp Ground cinnamon
- 1 tsp Baking soda
- 2 3/4 cups Rolled oats 220g
FILLING FOR SANDWICH COOKIES
- 1 1/2 sticks Butter 6oz or 168g
- 2 cups Powdered sugar 240g (plus a little more if desired)
- 1 tsp Vanilla extract
- 1 Tbsp Whole milk
- 1 tsp Orange zest
Instructions
OATMEAL COOKIES
- Preheat your oven to 350oF.
- Cream the butter, brown sugar and granulated sugar together in the bowl of a stand mixer fitted with the paddle attachment until light and fluffy. Add the eggs, vanilla and salt and mix until homogeneous. Add remaining ingredients and mix until just combined.
- Scoop into 2 Tbsp-sized mounds and place 2β apart on parchment-paper lined cookie sheets. Bake until just golden on the edges. Cool completely on cookie sheets.
FILLING FOR SANDWICH COOKIES
- Cream all ingredients until smooth using stand or handheld mixer.
- Take one cooke and pipe or scoop about 2 Tbsp of filling into the center. Take another cookie and carefully smush it down to create the perfect oatmeal sandwich cookie π Repeat, eat, and enjoy!
