Peppermint Patty Bars

BASE
- 1/2 cup all-purpose flour 60g
- 1/3 cup cocoa powder 35g
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1 pinch salt
- 1/2 cup granulated sugar 100g
- 2 oz unsalted butter 56g
- 2 egg yolks
PEPPERMINT FILLING
- 1/2 cup sweetened condensed milk 160g
- 10-15 fresh mint leaves
- 2 1/2 cups powdered sugar 250g
CHOCOLATE GLAZE
- 4 oz dark chocolate 112g
- 2 oz unsalted butter 56g
Instructions
BASE
- Heat oven to 350F and line an 8”x8” square baking pan with parchment paper.
- Place flour, cocoa powder, baking powder, baking soda, sugar and salt in the bowl of a stand mixer fitted with the paddle attachment (or in a food processor) and mix until just combined. Add the butter and mix until pebble-sized pieces form. Add the yolks and mix or pulse until just combined. Press into prepared pan and bake for about 15 minutes.
PEPPERMINT FILLING
- Pulse all ingredients together in a food processor until a thick, even paste forms. Once the base has cooled sufficiently, spread the peppermint filling evenly over the base and chill to set for at least 20 minutes.
CHOCOLATE GLAZE
- Melt butter in a small pan or in the microwave.Remove from heat and stir in chocolate until it has melted. Pour and spread evenly over the peppermint base/filling. Chill to set before cutting into bars.
