White Bean Bruschetta with Wild Arugula

Ingredients

  • 1/2 loaf Ciabatta bread
  • 1/4 cup Extra virgin olive oil

White Beans

  • 1/4 cup Extra virgin olive oil
  • 2 Garlic cloves sliced thin lengthwise
  • 2 Sage leaves
  • 1/2 cup Cooked white beans
  • 1 Pinch Pepper flakes

Arugula Garnish

  • 1 cup Wild arugula
  • 1 Tbsp Red wine vinegar
  • 2 Tbsp Extra virgin olive oil
  • Pinch Salt

Instructions

  • Brush bread with oil and grill on both sides.

White Beans

  • Heat a sauté pan for one minute. Add the oil, garlic, sage, and pepper flakes and cook for thirty seconds. Add the beans and continue to cook five minutes. Puree into a hummus type paste. Spread on grilled bread.

Arugula Garnish

  • Toss all ingredients together and place over top the bruschetta.
