White Bean Bruschetta with Wild Arugula
Ingredients
- 1/2 loaf Ciabatta bread
- 1/4 cup Extra virgin olive oil
White Beans
- 1/4 cup Extra virgin olive oil
- 2 Garlic cloves sliced thin lengthwise
- 2 Sage leaves
- 1/2 cup Cooked white beans
- 1 Pinch Pepper flakes
Arugula Garnish
- 1 cup Wild arugula
- 1 Tbsp Red wine vinegar
- 2 Tbsp Extra virgin olive oil
- Pinch Salt
Instructions
- Brush bread with oil and grill on both sides.
White Beans
- Heat a sauté pan for one minute. Add the oil, garlic, sage, and pepper flakes and cook for thirty seconds. Add the beans and continue to cook five minutes. Puree into a hummus type paste. Spread on grilled bread.
Arugula Garnish
- Toss all ingredients together and place over top the bruschetta.
