The Gourmandise School, touted as one of the Best Cooking Schools in Los Angeles, and pioneering organic dairy brand, Straus Family Creamery, announce a partnership in which The Gourmandise School will use Straus’ minimally processed organic dairy products in its culinary classes and showcase Straus’ ecologically-minded and organic farming practices educating students about the importance of sustainable farming.
The partnership will give the Santa Monica-based cooking school’s students an opportunity to gain awareness about organic farming practices and to cook with the highest-quality dairy ingredients, including Straus’ organic European style butter, minimally processed whipping cream and milk, as they learn new cooking techniques, develop their culinary intuition.

Innovating for Tomorrow
Renewable energy is one of the focuses of the Straus Dairy Farm’s sustainable model. At the dairy farm, the methane digester captures methane (a greenhouse gas) from the cows’ manure and transforms it into electricity. Operating since 2004, the methane digester provides enough renewable energy to power the entire dairy farm, charge Albert Straus’ electric car and other farm vehicles.
Organic Dairy Farms
Founded in 1994, Straus Family Creamery is a mission-driven, family-owned-and-operated business dedicated to making premium organic dairy products, with minimal processing. The Straus Dairy Farm and Creamery, located in the small town of Marshall on the Northern California Coast, was the first certified organic dairy farm west of the Mississippi River and the first 100% certified organic creamery in the United States.
In addition to the Straus Dairy Farm, Straus Family Creamery buys certified organic, Non-GMO Project Verified milk from nine other organic family farms in Northern California’s Marin and Sonoma Counties: the two Tresch family dairy farms, the Hughes, Correia, Brazil, Silacci, and Mendoza dairies, Cypress Lane Ranch, and Silva Family Dairy ensuring an adequate supply of certified organic dairy products of exceptional quality. This relationship strengthens the community of family farms in Marin and Sonoma Counties by providing stable pricing as well as strong personal alliance with each milk supplier.
