Ingredients
John's Tin Roof Cookie Bars
1stickButter
1/2cupBrown Sugar
1cupFlour
2Eggs
1cupBrown sugar (yes, again)
1tspVanilla extract
1cupSalted Spanish peanuts
1-1/4cupsDark chocolate chunks
Instructions
John's Tin Roof Cookie Bars
Preheat your oven to 350 and line an 8x8" pan with parchment paper.
Cream butter and brown sugar until light. Add flour and mix well. Press into the pan and bake at 350 for 20 minutes or until a pale gold color. Cool crust.
Beat eggs and 1 cup brown sugar until smooth. Add vanilla and mix well. Set aside. Remove from oven and cool.
Once the crust has cooled off, sprinkle the top with dark chocolate chunks and peanuts. Pour egg and sugar mixture over top. Bake for 30-35 minutes until center of mixture is not jiggly.
