Ingredients

nutmeg

sugar

butter

cup
heavy cream

inches
orange and lemon
zested
Instructions
Boil yams in water until tender.
Peel and cut in medium sized pieces.
Blend first half of the yams in food processor, then the second half.
Add remaining ingredients.
Place mixture in buttered souffé dish.
Top with butter and brown sugar.
Bake at 350 for 40 minutes.
