We have the great pleasure of playing and sharing food all day and inviting others to share in our joy. Siggi Hilmarsson and his team of yogurt aficionados came to spread their love of all things dairy in our kitchen last year, concocting a delicious menu inspired by their Icelandic products. This quick appetizer by far the hands-down favorite dish of the evening. You’ll be able to satisfy 6-7 hungry pre-brunch eaters with this recipe, but it’s easy to double and triple if you get your friends to roll up their sleeves and help assemble.
Ingredients
2Tbspthick, unflavored yogurtsuch as Siggi's Skyr
Juice of ½ a lemon
¼cupfresh watercress
2slicesRye breador a small, sliced loaf
3ouncessmoked salmon
1Tbspcapers
Salt and pepper to taste
Instructions
Mix the yogurt and lemon juice together. Slice the bread into triangles, toasting them first if not using a denser loaf. Spread the mixture over each slice of bread.
Top each slice with fresh watercress. Layer on smoked salmon, followed by sliced red onions and capers, if using. Sprinkle with salt and pepper to taste.
