We’re not big fans of kitchen gadgets and one-use items, but we happened by a pizzelle maker and have been making waffle cones and these wafer cookies nonstop since. Look on craigslist or ask a neighbor before investing in one.
Ingredients
1Egg white30g
1Egg50g
1/4tspSalt1g
1/2cupSugar100g
2/3cupFlour85g
2tbspMeltedBrowned Butter
Instructions
Heat the waffle iron.
Whisk together the eggs, salt and sugar. Whisk in the butter, then add the flour and mix until just combined.
Place 2 Tbsps at a time onto the hot iron and cook for 1-2 minutes.
Spread caramel (see the recipe in the Caramel Shortbread Brownies post) a tsp at a time between 2 cooled cookies.
