2cupsPowdered sugar 240g (plus a little more if desired)
Preheat your oven to 350oF.
Cream the butter, brown sugar and granulated sugar together in the bowl of a stand mixer fitted with the paddle attachment until light and fluffy. Add the eggs, vanilla and salt and mix until homogeneous. Add remaining ingredients and mix until just combined.
Scoop into 2 Tbsp-sized mounds and place 2” apart on parchment-paper lined cookie sheets. Bake until just golden on the edges. Cool completely on cookie sheets.
FILLING FOR SANDWICH COOKIES
Cream all ingredients until smooth using stand or handheld mixer.
Take one cooke and pipe or scoop about 2 Tbsp of filling into the center. Take another cookie and carefully smush it down to create the perfect oatmeal sandwich cookie :) Repeat, eat, and enjoy!
