Ingredients

1/2 cupall-purpose flour60g
1/3 cupcocoa powder35g
1/4tspbaking soda
1/4tspbaking powder
1pinchsalt
1/2 cupgranulated sugar100g
2ozunsalted butter56g
2egg yolks
PEPPERMINT FILLING
1/2cupsweetened condensed milk160g
10-15fresh mint leaves
2 1/2cupspowdered sugar250g
CHOCOLATE GLAZE
4ozdark chocolate112g
2ozunsalted butter56g
Instructions
BASE
Heat oven to 350F and line an 8”x8” square baking pan with parchment paper.
Place flour, cocoa powder, baking powder, baking soda, sugar and salt in the bowl of a stand mixer fitted with the paddle attachment (or in a food processor) and mix until just combined. Add the butter and mix until pebble-sized pieces form. Add the yolks and mix or pulse until just combined. Press into prepared pan and bake for about 15 minutes.
PEPPERMINT FILLING
Pulse all ingredients together in a food processor until a thick, even paste forms. Once the base has cooled sufficiently, spread the peppermint filling evenly over the base and chill to set for at least 20 minutes.
CHOCOLATE GLAZE
Melt butter in a small pan or in the microwave.Remove from heat and stir in chocolate until it has melted. Pour and spread evenly over the peppermint base/filling. Chill to set before cutting into bars.
