Chef Carol’s Curry Turkey Salad
Servings: 2 large sandwiches

Ingredients
- 1 cup leftover turkey diced
- ¼ cup celery diced
- 1 tablespoon green or red onion minced
- 1 tablespoon curry powder
- ¼ cup mayonnaise
- ½ cup apple diced
- pinch of salt
Instructions
- Combine all ingredients, adding more mayonnaise if you feel necessary. Spread a little leftover cranberry sauce on one side of bread or roll.
- Spoon turkey salad on top. Followed by bread.
