- 2 lb yams
- ½ tsp nutmeg
- ¾ tsp salt
- 1 dash cloves
- 2 Tbsp sugar
- 2 Tbsp butter
- 1 egg
- ¼ cup heavy cream
- 2 inches orange and lemon zested
- Boil yams in water until tender.
- Peel and cut in medium sized pieces.
- Blend first half of the yams in food processor, then the second half.
- Add remaining ingredients.
- Place mixture in buttered souffé dish.
- Top with butter and brown sugar.
- Bake at 350 for 40 minutes.
