Yam Soufflé

Ingredients

  • 2 lb yams
  • ½ tsp nutmeg
  • ¾ tsp salt
  • 1 dash cloves
  • 2 Tbsp sugar
  • 2 Tbsp butter
  • 1 egg
  • ¼ cup heavy cream
  • 2 inches orange and lemon zested

Instructions

  • Boil yams in water until tender.
  • Peel and cut in medium sized pieces.
  • Blend first half of the yams in food processor, then the second half.
  • Add remaining ingredients.
  • Place mixture in buttered souffé dish.
  • Top with butter and brown sugar.
  • Bake at 350 for 40 minutes.
