Tin Roof Bar Cookies

Ingredients
John’s Tin Roof Cookie Bars
- 1 stick Butter
- 1/2 cup Brown Sugar
- 1 cup Flour
- 2 Eggs
- 1 cup Brown sugar (yes, again)
- 1 tsp Vanilla extract
- 1 cup Salted Spanish peanuts
- 1-1/4 cups Dark chocolate chunks
Instructions
John’s Tin Roof Cookie Bars
- Preheat your oven to 350 and line an 8×8″ pan with parchment paper.
- Cream butter and brown sugar until light. Add flour and mix well. Press into the pan and bake at 350 for 20 minutes or until a pale gold color. Cool crust.
- Beat eggs and 1 cup brown sugar until smooth. Add vanilla and mix well. Set aside. Remove from oven and cool.
- Once the crust has cooled off, sprinkle the top with dark chocolate chunks and peanuts. Pour egg and sugar mixture over top. Bake for 30-35 minutes until center of mixture is not jiggly.
