Ricotta Latkes

Ingredients
- 250 g ricotta cheese
- 90 g all-purpose flour
- 3 eggs
- 3 Tbsp sugar
- 7 g baking powder
- 1 Tbsp vegetable oil OR melted butter to coat the pan
- honey, maple syrup or powdered sugar to serve
Instructions
- Whisk together all the ingredients (excluding the oil) to obtain a smooth batter.
- Heat the oil or butter in a pan over medium heat, then ladle the batter in small amounts to form pancake-sized latkes.
- Cook the latkes for about two minutes per side, until golden. Serve with honey, maple syrup, or powdered sugar.
