Ricotta Latkes

  • 250 g ricotta cheese
  • 90 g all-purpose flour
  • 3 eggs
  • 3 Tbsp sugar
  • 7 g baking powder
  • 1 Tbsp vegetable oil OR melted butter to coat the pan
  • honey, maple syrup or powdered sugar to serve


  • Whisk together all the ingredients (excluding the oil) to obtain a smooth batter.
  • Heat the oil or butter in a pan over medium heat, then ladle the batter in small amounts to form pancake-sized latkes.
  • Cook the latkes for about two minutes per side, until golden. Serve with honey, maple syrup, or powdered sugar.
